This is one of the more out-there recipes I've tried. I wasn't fully convinced that I would like it, rice paper can get quite gummy but I know my partner used to like the non-vegan version so it was worth a try.

The recipe is from The Gentle Chef website. The ingredients are pretty simple but it does take some effort and just a disclaimer, it's very hands-on and oily!
Here's the list of ingredients, for quantities follow the link above :blush:
Rice paper
White shoyu, I didn't have any so I used soy sauce
Water
Vegan Worcester sauce, again I didn't have any so I used mushroom ketchup which quite similar
Beetroot powder
Olive oil
I followed the instructions to the letter. My version looks a bit darker, more like bresaola than prosciutto crudo because of the darker soy sauce I used.

I served it wrapped around melon and grilled asparagus (it was slippery and so difficult to arrange the melon slices as they were sliding around the plate!). I have to say that I'm very impressed. It has a complex and savoury flavour even though it contains very few ingredients. My partner was over the moon and is now making plans for the next time we make it :grin:

Haha funny you mention that, by the time I finished I was up to my wrists in oil and the wrapped melon was sliding on its own accord and not staying where I was trying to place it on the plate... Let's just say presentation didn't go according to plan :sweat_smile: :joy:
