okay so I’ve been making A LOT of hummus lately which means I’ve been having to find ways to use up all the leftover aquafaba.

I’m sure y’all already know what aquafaba is by now but if not, it’s basically just the liquid leftover from a can of chickpeas! It’s often used as an egg replacer in baked goods and other recipes like macaroons and meringues.

anywhooo, I’ve been experimenting with aquafaba and came up with this super easy, extremely delicious fluffy vegan ice cream!

I literally just blend about a half cup of aquafaba in a food processor until it becomes whipped, forming stiff peaks.

Then i just add in some frozen bananas and a dash of vanilla extract and cinnamon and ur done!

some other recipes that I’ve been experimenting with using aquafaba include pudding, fluffy brownies, and crepes, but this nice cream recipe is by far my favorite! It’s just so simple yet so good!
