Yuca is the root of a bush, native of Sudamerica It is similar to potatoes, although its skin is harder. It is a good source of energy for its amount of carbohydrates and sugars. This portion I show was first boiled with salt for about fifteen minutes; first you have to cut the skin. When it is tender, it is put in the oven for 15 minutes with oil at 200 degrees C. As an accompaniment, I made a sofrito of tomatoes, peppers and chili peppers, ed through the blender.

I see Yuca room in our stores here in Houston texas. I always see it in Hispanic markets . I even seen a tortilla and flour made from it .I think it was from El Salvador company?
