I was looking for recipes to cook in the slow cooker mode of my Instant Pot when I came across this recipe: Pudding Cake.
It was so wildly different to anything I've cooked in my IP so far that I made it on the spot to try! I was pleasantly surprised with the results, I mean it actually turned out like a cake with a creamy pudding sauce. The pudding to cake ratio was about 1:1 so I think I'll try cooking it a little bit longer next time. I followed the recipe almost precisely, I'll add my version here, if you'd like to look at the original recipe please follow the link :blush:
1 cup flour
1/2 tsp salt
1 3/4 tsp baking powder
1/2 cup cocoa powder
3/4 cup brown sugar
1 tsp instant coffee powder
1 1/2 cups soya milk
2 tbsp sunflower oil
2 tbsp applesauce
2 1/2 tsp pure vanilla extract
2 cups boiling water
2 tbsp brown sugar
1/3 cup chocolate chips, for sprinkling
Oil spray, for greasing IP pan
In a large bowl sieve the flour, salt, baking powder and cocoa powder and set aside. In a jug mix the sugar, coffee, soya mill, oil, applesauce and vanilla extract. Pour the wet ingredients in the dry ingredients and mix gently until combined. Pour the mixture in the greased container of the slow cooker/IP and pour on top the boiling water without mixing. Sprinkle the sugar and chocolate chips and cook on high for slow cooker or "More" using the slow cooker mode of the IP for 1.5 hours. Open the lid and let it cool down for at least 1 hour more to help it set before serving. I served mine with some Alpro vanilla ice cream :blush:

Let me know if you liked it :blush: It's very convenient because you just leave it in the background and don't have to worry about it. I think it'd make an easy dessert when preparing a large dinner, not the prettiest but comforting :blush:
